Ingredients
- 16 oz. Jimmy Dean hot breakfast sausage
- 1 pound sweet potatoes, shredded
- 2 tbls. brown sugar
- ¼ tsp. curry powder
- Scant ¼ tsp. nutmeg
- ¼ cup melted butter
- ½ cup chopped onion
- 8 eggs lightly beaten
- 16 oz. ricotta cheese
- 8 oz. cheddar cheese grated
- 8 oz. mozzarella chopped
- 1 cup fresh spinach, chopped
- ¼ tsp. salt and ¼ tsp. ground pepper
Directions
- Preheat oven to 375 degrees. Spray a 9X13 inch casserole with Pam.
- In a skillet, cook sausage until evenly browned and crumbled about 10 minutes. Set aside.
- Add onion to same skillet and cook slowly until onion had softened.
- In mixing bowl, stir together sweet potatoes, brown sugar, curry, nutmeg and melted butter. Press into bottom of prepared casserole.
- Stir together eggs, ricotta shredded cheddar cheese, mozzarella, spinach, onion, salt and pepper and sausage.
- Pour egg mixture over sweet potatoes.
- Bake about 40 minutes until top is golden brown and eggs are set.
- Cool 10 minutes before cutting into squares.
